A shrub, derived from the Arabic word sharāb, meaning 'to drink', is a concentrated syrup made from fruit, sugar and vinegar. Historically, it was a way to preserve fruit, but has persevered through the aged as a popular mixer, adding a tart, fruity flavour to beverages. 

The Strawberry Eucalyptus and Watermelon shrub is best enjoyed with soda water and fresh mint to bring out all the notes. Adding gin will also bring out the botanicals of the lemon myrtle and strawberry gum.
